Peppermint cheesecake

Servings 10-12 | Preheat 350

Ingredients

Filling:

2 8oz blocks full fat cream cheese

1 cup sugar

Oreo filling from cookies

2 eggs

½ cup melted white chocolate chips

1 tsp vanilla

1 tsp peppermint extract

2 drops red food coloring

Crust:

1 standard package of Oreos

3 tbsp melted butter

1 tbsp sugar

Directions

Remove the filling from the Oreos and place in a medium size mixing bowl, set aside. Place the Oreos (chocolate cookie) in a bag and smash with a cup or rolling pin until fine crumbs. Pour in the melted butter and the sugar and mix thoroughly. Pour mixture into a spring form pan and with a cup or spoon press up the sides and around the bottom, until set and even. Bake at 350 for 8 minutes.

While the crust is baking mix together the cream cheese, sugar, and Oreo filling until soft and fluffy. Add in eggs one at a time, mixing thoroughly after each addition. Add in the melted chocolate, vanilla, and peppermint and stir to combine. Drop in the food color and lightly mix, leave a marbled effect to make the cake look like a peppermint candy when it comes out of the oven.

Pour the filling into the baked crust and continue to bake for 50 minutes, or until there is a slight jiggle about the size of a quarter. Leave the cheesecake in the oven to cool (turn oven off). Before serving top each portion with whipped cream and white chocolate shavings. Enjoy!
